Perfect Pairings
By Bill & Karen Garlough
As reported in The Sun Naperville, The Beacon News The Courier News and The Herald News – January 30, 2009
One New Year's resolutions for 2009 is to find interesting new wines that offer exceptional value. In the column, I have always tried to present the wines that offer good and this approach is more appropriate than ever.
With all of snow / ice sleet and rain we experienced in this time of year, we tend to hang out in our homes and host or attend internal parts. playoffs Football provides a good reason to invite your friends over and have some fun. In this column, Karen provide a quick and easy Jalapeno Spread perfect for football and feasts bill pair some wines that work well with this food.
Wine Facts
The football games are fun and offers a way to meet and socialize informally. Rate football game tends to be bold and spicy, barbecue ribs, chili, pizza, sandwiches and a variety of sauces and fries as common menu items. These dishes usually call for beer. When there was a party, is a good idea to offer non-wine drinkers of beer and a variety of options including soft drinks and soda water.
Like wine growing rapidly in popularity in the U.S., not wine from a wide variety of tastes and styles available. slightly sweet and fruity tend to be balanced with spicy peppers. I will focus on some red wine that your guests to enjoy their football.
I recently visited a couple of local wine merchants and dared to suggest wines that are fruity, reasonably priced and have a fun and fancy name. Mark Dryden of Cabernet and Company in Naperville rose this challenge with two interesting reds. Both wines are blends of merlot, cabernet and syrah. Fruity Merlot to give a wine character. The first wine called Mark suggested papaya, the Cellar Bergevin in Washington. This wine has great cherry notes. I can only imagine your guests to "too long" for another glass of fruit pump. Mark's second recommendation Sacred Stone Master's Red Blend from Pietra Santa Winery, Syrah grapes containing more than the fruit bomb, and taste is slightly more dry. Both wines are ideal drinks football.
Fiesta Fare
When guests are over, the recipes that are quick, easy and relatively inexpensive are ideal. At parties, people love to nibble on a variety of convenience foods that are bold and spicy. This recipe is reminiscent of jalapeno poppers served in most pubs. Can also be made with low fat cream cheese and mayonnaise without sacrificing flavor. Add more jalapenos if you want an extra touch!
Tavern Popper Spread
2 oz 8 packages cream cheese, softened
1 cup mayonnaise
1 4 oz can chopped green chilies
1 / 8 cup (2 oz.) Jalapeno slices (bottled, not fresh), chopped (add more to taste)
1 cup Parmesan cheese, grated
½ Cup Bread Crumbs (Panko is Japanese recommended)
French Sliced bread – toasted
Or
Tortilla Chips
In a large bowl, combine cream cheese and mayonnaise. Mix in the green peppers and jalapeno peppers. Transfer the cheese mixture in an oven safe dish service. Combine the Parmesan and bread crumbs. Sprinkle the breadcrumb above. Bake in oven at 400 degrees for 15 to 20 minutes until cheese is hot and add browned. Garnish with a 3 to 5 Chile peppers into slices and serve with slices French toast or tortilla chips.

Pilar Red Box – suggested retail price of $ 11
While the label is whimsical, like many Australian wines, the content is serious.
This wine contains 50% Syrah, 42% Cabernet Merlot and 8%. It has a dark purple
And offers a fruity nose of black cherry, raspberry and blueberry black. This full-bodied red offers great value and received a 91 rating from Robert Parker, the famous wine critic.
